Originally from Pachuca, Hidalgo studied at the International Culinary School in Toluca and earned an International Executive Chef certification. His career has taken him through diverse Mexican kitchens, from Toluca to Baja California, where he honed his skills in places like the Guadalupe Valley and Los Cabos. At Los Cabos, he worked as a chef de partie at the prestigious Fiesta Americana Grand Los Cabos under renowned chefs Gerardo Rivera and Oscar Rito.
His professional journey eventually brought him to Puerto Vallarta, where he worked at La Palapa restaurant and participated in the renowned International Gourmet Festival. Yet, it was in Tulum that Miguel Hidalgo truly found his calling, working for 11 years at Ziggy’s and Fresco’s restaurants and creating Dinner Experience “Sentir”, an exclusive culinary experience for the Soy Tulum foundation.
