“This initiative holds immense importance; lobster has been one of the primary flavors defining this municipality for a long time, but elevating it in this manner will undoubtedly lead to continued recognition of the hard work put in by the fishermen, both on their boats and in the cooperative’s fishing grounds,” remarked Mendoza.

He went on to elaborate that Tulum’s lobster has gained national acclaim due to the fishing methods employed. Giving it the status of a local dish will not only showcase its delectable taste to tourists but also emphasize the preservation efforts undertaken through a sustainable framework.

Moreover, as they savor these flavors, they will know that they come from a fishing practice that respects the reefs and lobster production,” he asserted.
